You are a brave man Luke, trying to make ginger beer. My last attempt was in the dormitory at boarding school.
As usual there was a dispute as to the ingredients; however we made several bottles with different formulae. They were put in lemonade bottles, with lock down wire stoppers, on top of any out of the way cupboard and left to brew.
My super version with double ingredients exploded in the middle of the night showering those in nearby beds with glass. It also left a brown stain on the ceiling in the corner. This stain lasted for over 30 years until dormitories went out of fashion and the boarding house was refitted.
Fortunately the sound did not travel and I escaped any retribution.
