May not be a "hollow" in the literal sense, but here is some "lookout posts" where one can get an overview without being seen.

In PM, the top of the Promontory, where the D's looked down on the lawn
to see Nancy creat the "NO GO" message. This lookout point was used several times in PM, Another time as the Amazons, in "frocks", came across the lawn to meet the D's and take them to the boatbuilder to get the Scarab. At the end, the D's again went to that lookout, and watched the final departure of the GA and the crowd of Joly's men.

A reather impromptu lookout was also in PM, as they returned from the trek to the mine, and realizing Cook was upset, and they found that the GA was missing. When Joly's men gathered the next day to do the search, the D's hid up in the woods, to look down on Beckfoot at the gathering of Joly's men, watching the Amazons join the search as well as Jackie.

There was another lookout point in SA, as Titty hid near the harbour to watch the Amazons land there to go into their camp, leaving Amazon unguarded.

Also in SA, a lookout point was in the reeds by the mouth of the Amazon River, as the Amazons hid there to watch John and his crew in the Swallow move up stream to try to get Amazon they hoped was accessable in the boathouse, or perhaps hidden further upriver. Peggy's ability to quack like a duck avoided that spy position from being discovered.

As a young man, Peter Duck used the top of a palm tree as a lookout point as he watched the burial of the treasure, according to his recounting of that memory to his new friends.

In PP, the scouts positioned near the home base of Squashy Hat, ready to observe his movements, and to signal that report to the miners at the Gulch, used a lookout point well hidden so they could look out for SH.
